Mom's Quesillo (flan) recipe.


INGREDIENTS:

  • 6 eggs
  • 2 cans of Sweetened Condensed Milk
  • milk
  • Sugar

  • --------------------PREPARATION:--------------------

    --Caramel--
    Heat sugar under medium heat until it melts into caramel consistency.
    Adding a little water may help. Consistency should be thick liquid with
    a dark color. Pour caramel into cooking pan covering as much of the
    bottom as possible.
    Set this aside.

    --MIX:--
    Blend the six eggs with the two cans of Sweetened Condensed milk
    and milk. Use Sweetened Condensed milk cans to measure out two
    cans of regular milk. Pour well mixed ingredients into Caramel lined
    pan(s). Cover pans and place inside larger pan containing water. Just
    enough water to reach a quarter to half way up the mix pans.
    Bake in 400 degree oven for 60 to 90 minutes.
    Temperature and time will vary depending on your oven, the mix,
    time of day, oven's latitude and longitude, etc.
    Stab Quesillo with a knife to see if it is done. A knife that comes out
    clean and dry indicates a Quesillo that is done.
    Let cool and you are done!


    Quick notes:
    -I use aluminum bread loaf pans covered with aluminum foil.
    -I haven't tried using low fat Sweetened Condensed Milk -but
    really, what would be the point!?
    -I have used 2% milk rather than whole milk. No difference.
    -The amount of sugar you need depends on how much caramel
    you want and how good you are at making said caramel.
    -For special flavors, substitute the milk with coffee, coconut milk,
    chocolate milk or just about anything you want to try.









    Mom's Cheese Cake recipe.


    INGREDIENTS:

  • 4 eggs
  • 2 cans of Sweetened Condensed Milk
  • 1 box of [Philadelphia] Cream Cheese
  • Lime (lemon -green)
  • --------------------PREPARATION:--------------------

    Blend your 4 eggs with two cans of sweetened condensed milk, 1 box
    of cream cheese and lime shavings. Place mix into greased baking pan. And
    bake in 350 degree oven for 30 to 60 minutes. Use a knife to test the
    cake to see if it is done. A knife that comes out clean and dry means
    the cake is ready.
    Cool and eat. Eat fast before it is all gone!


    Quick notes:
    -Use what ever method works best for you to get the lime shavings.
    What you want is just specks of the green lime shell, not juices.
    -Mix can be poured onto a ready bake/made pie crust.
    -Grease pan and/or layer with parchment paper or it WILL stick.
    -Hey, the cake will look great in the oven. Take it out and it flattens
    out. That's okay. You did nothing wrong. It will still taste great...flat!









    Mom's Bread Pudding recipe.


    INGREDIENTS:

  • 1 lb of 3 to 4 day old bread
  • 4 eggs
  • 4 cup of milk
  • half a cup of [RUM soaked] Raisins
  • Rum
  • 2 lbs of Sugar
  • half a cup of butter
  • 4 cups of grated cheese
  • half a cup of vanilla extract
  • --------------------PREPARATION:--------------------

      1. Cut bread into small pieces, about 1 inch in size. Place in container to soak in milk. Mix often.
      2. Pre-heat oven -400 degrees.
      3. Use butter to grease baking pan sides and bottom.
      4. Mix together bread, milk, eggs sugar, cheese and vanilla extract. Mixture should have a thick consistency.
      5. Gently mix in raisins and pour it all into pre-greased baking pan about half way up -do not overfill.
      6. Bake for one hour. Check with knife to ensure it is done. Clean knife indicates cake is done. It should have a golden brown crust.
      7. When done, remove and set aside to cool. Serve room temperature or cold -to taste. The longer it sits, the better it tastes -the rum will infuse the mix the longer it sits.
      8. EAT!! And enjoy.




    Mom's Pudin De Atun/ Tuna casserole recipe.


    INGREDIENTS:

  • 4 sandwich bread slices [may substitute with bread crumbs]
  • 4 eggs
  • 1 cup of milk
  • seasoning cube
  • 2 teaspoon of margarine
  • 1 can of tuna
  • 1 can of milk creme (a.k.a. whipping cream, heavy)
  • 1/4 cup of parmesan cheese
  • --------------------PREPARATION:--------------------

      1. Mix bread, milk, margarine, seasoning cube [crushed] and milk creme.
      2. Beat eggs. Add eggs to tuna and cheese.
      3. Add both mixes together and add to baking bowl.
      4. Bake for 45 minutes at 350 degrees.
      5. Eat cold or hot..

      Quick notes:
      -If using sandwich bread, take off crust before using.




    Eggnog (pasteurized).


    INGREDIENTS: (to make one-quart)

  • 4 large eggs
  • 3/4 cup of sugar
  • 3 cups of whole milk
  • 1 cup heavy cream (a.k.a. whipping cream, heavy)
  • 1 teaspoon vanilla extract
  • 1 teaspoon freshly grated nutmeg (plus more for serving/garnishing)
  • Optional (but let's be honest...) 3/4 to 1 cup bourbon, rum, or brandy

  • --------------------PREPARATION:--------------------

    1. Whisk eggs and sugar until smooth and slightly thick.
    2. Heat milk and cream in a large saucepan over medium heat until steaming (NOT boiling).
    3. Slowly whisk about 1 cup of the hot dairy into the eggs to temper.
    4. Pour everything back into the pot. Cook over medium-low, stirring constantly, until it reaches 160 F/ 71 C and thickens slightly.
    5. Remove from heat. Stir in vanilla (and nutmeg) and alcohol.
    6. Strain if desired.
    7. Chill at least 2 hours (overnight is better).


    Serving tips:
    -Shake or stir before serving.
    -Don't drive after drinking. :)

    **Additional Note: The "pasteurizing" process is minimal and
    only serves to give end product a bit longer "shelf" life.





    Almond Horchata (shake-like drink) recipe.


    INGREDIENTS:

  • 1 cup of blanched whole almonds, soaked overnight in 2 cups of cold water
  • 1 vanilla bean, split
  • 1/4 cup of sugar
  • 3/4 teaspoon of ground cinnamon
  • cayenne pepper
  • 2 cinnamon sticks
  • --------------------PREPARATION:--------------------

      1. Put almonds and soaking water in a saucepan and bring to boil.
      2. Transfer to blender, blend until smooth.
      3. Strain through very fine strainer (discard solids).
      4. Pour almond milk back into blender, along with sugar and ground cinnamon; blend well.
      5. Pour into 2 glasses, sprinkle w/cayenne and garnish w/cinnamom sticks.

      Quick notes:
      -I've not made this yet. Looks yummy.








    Torrijas (bread) recipe.


    INGREDIENTS:

  • 3 cups of Olive oil
  • 2 cups of dry Spanish wine
  • 18 1/2 inch slices of crusty Spanish bread (or baguette)
  • 3 large eggs
  • 1/4 cup of sugar, mixed w/2 tsp of ground cinnamon
  • Mosto *
  • --------------------PREPARATION:--------------------

    --Bread--
    Heat olive oil in large heavy pot over medium-high until it reaches 365 degrees. Meanwhile, pour the wine into large shallow bowl, add bread, let soak briefly, until evenly moistened. In another shallow bowl, beat eggs until well mixed. Working in batches, remove bread from wine, draining well, add to eggs, turn to coat both sides, add to hot oil and cook until golden brown, 1 minute per side. Drain on paper towels, sprinkle with cinnamon sugar, drizzle with Mosto, and serve.

    --Mosto--
    Boil 3 cups of dry red wine with 1 cup of sugar, a cinnamon stick, and a splash of fresh apple cider until it is reduced by three-quarters (thick and syrupy).

    Quick notes:
    -Another I have not tried. The wine will make it out of reach for me (if anyone tries it, let me know what I'm missing).







    Polvorosas.


    INGREDIENTS:

  • 1 kg (just over 2 lbs?) of flour
  • 1/4 kg (just over 8 ounces?) of sugar
  • Cinnamon (measure out to taste as it is not a critical ingredient)
  • Powder sugar as decoration

  • --------------------PREPARATION:--------------------

    1. First, run the flour, sugar, and the powder cinnamon through a sieve/ strainer, then add to this mixture butter (softened - 2 tablespoons) and knead to a soft consistency.
    2. Molding can be done through the use of forms, upside down cup, or rolling into logs and cutting slices off. Whatever. Just get the form you want.
    3. Put on baking sheet (lined or greased) and bake at 350 until golden.
    4. If powder sugar is available, once let cool, garnish the Polvorosas.

    Serving tips:
    -Ah, none Just don't eat too many.


    Note:
    -So conversions to USA measurements are not exact, which is why I included both.
    -Also, the sieve/strainer thing is an option in my opinion. I'll edit this once I try the recipe.
    -Last thing: recipe calls for butter or lard. Ah, I choose butter, but you decide.
